Chicken Taco Naan Pizzas
This dish couldn't be easier to pull together. Cook your chicken in advance and you'll have a pizza on the table in less than 10 minutes.
Ingredients:
- 4 whole wheat Naan, or original Tandoori Naan
- 1 Cup(s) salsa, plus more for serving
- 1 Cup(s) mozzarella cheese, shredded, divided
- 1 Cup(s) black beans, no-salt added, rinsed and drained
- 1 Cup(s) frozen yellow corn, thawed
- 2 chicken breast(s), grilled, frozen, boneless, skinless, thawed and chopped or sliced
- 1/4 Cup(s) fresh cilantro, chopped
- 1 Teaspoon(s) extra virgin olive oil
Poach or cook chicken during prep time.
Directions:
- Preheat oven to 400°F
- Lightly drizzle olive oil on each piece of bread.
- Spread 1/4 of the salsa over each naan and sprinkle with 1/4 of the cheese. Top each with 1/4 of the beans, corn, and chicken and bake until crust is crisp and cheese is bubbly and naan is crisp, about 5 - 7 minutes. Sprinkle with cilantro, cut into wedges and serve.
